Spinach Feta Faux-cacia

ingredients
8 Rhodes Bake-n-Serv frozen dinner rolls
1 lb spinach, washed and chopped
2 cloves garlic, minced
1 onion, diced
2 slices of bacon, sliced into vertical strips
1/2 C crumbled feta (or whatever cheese you have on hand)
2 eggs
olive oil
salt and pepper to taste

Place frozen dinner rolls on a lined tray. Cover and let sit for two or more hours. The rolls will thaw and rise.

Heat oven to 375° F.    In a large pan, heat a tablespoon of olive oil on medium-high heat until hot. Add garlic and onion and saute until soft. Add bacon and cook until brown around the edges, about 2 to 3 minutes. Add the spinach, a handful at a time. Continue cooking until all of the spinach is incorporated. Transfer spinach mixture to a colander and let drain.

In a separate bowl, crack and beat two eggs. Add feta, salt and pepper. Transfer drained spinach mixture to the bowl with eggs.

Using a half-cup measuring cup, press down on each dinner roll, so that each roll resembles a crust. Add a heaping portion of the spinach mixture to the middle of each crust.

Put rolls into the pre-heated oven. Bake for 18 to 20 minutes, or until golden.
