Korean Beef Steam Buns

10 oz. thinly sliced beef
6 Chinese steam buns
2 scallions
3 radishes, thinly sliced
1 T finely chopped ginger
2 T black bean sauce

For sauce:
1/4 C mayonnaise
2 tsp gochujiang

While preparing the beef, steam the buns until soft. Combinne mayonnaise and gochujiang and set aside.

Cut scallions and separate into white and green parts. Season thinly sliced beef with salt and pepper. Heat 2 teaspoons of olive oil on medium-high until hot. Add seasoned beef in a single layer. Cook, without stirring, until browned, about 1 to 2 minutes. Add white portion of scallions, ginger, black bean sauce and gochujiang. Continue cooking, stirring to combine, until beef is just cooked through.

Gently open each steamed bun and spread with mayonnaise mixture. Divide beef and sliced radishes among buns. Garnish with remaining green onions and serve.
