Zucchini and Mushroom Pancakes

1 egg
2/3 C flour
1 t baking powder
1 zucchini, shredded
1/2 C sliced mushrooms
1/2 C diced onions
1 garlic clove, minced
salt and pepper
1/2 C water

In a mixing bowl, combine egg, flour, baking powder and water. Stir in zucchini, mushrooms, onion, garlic, salt and pepper. If batter is too thick, add water 1 tablespoon at a time.

Oil pan and heat over medium-high heat. Cook pancakes about 2 minutes per side.

Reheats nicely.
