Broccoli Cheese Casserole

ingredients
1 lb broccoli florets, steamed
2 T butter
2 T flour
1.5 C milk
1 C sharp cheddar, shredded
2 T dry white wine
salt and pepper to taste

Preheat oven to 350° F. Grease a casserole dish and cover the bottom with the steamed broccoli. In medium saucepan melt the butter, then add flour and a pinch of salt and pepper. Cook until the roux is smooth and bubbly. Gradually add milk and bring to a boil. Reduce heat and add cheese and wine. Whisk constantly until cheese is melted and mixture is thick. Pour the sauce over the broccoli and bake approximately 15 minutes, or until the sauce bubbles. Let cool, then serve.

A quick way to steam broccoli is to put the florets in a medium sized bowl, filled halfway with water. Cover with plastic wrap and pop it in the microwave for two minutes. Remove from the microwave, toss the broccoli, re-cover and nuke for another two minutes. Also, have fun experimenting with different cheeses and spices for a variety of flavor profiles.
