Slow Cooker Adobo

3 lb. pork country ribs, cut into 1″ cubes
1/2 C vinegar
1/2 C soy sauce
1 C water
3 bay leaves, crumbled
2 t whole peppercorns
4 garlic cloves, diced
1 medium onion, chopped

Combine all ingredients in the slow cooker and cook for 8 hours on low.  Serve over rice.

You can also easily substitute chicken thighs, either whole or in bite sized pieces, for the pork.
