Salmon with Crispy Skin
1 lb. salmon fillet with skin on
3 T unsalted butter, softened and divided
salt and pepper
Pre-heat broiler on high, with the rack about five inches from the heat source.
Line a baking sheet with aluminum foil and coat lightly with cooking spray. Sprinkle both sides of the salmon fillet with salt and pepper. Place the salmon skin side up on the baking sheet. Rub butter all over the skin of the salmon. Place salmon in fridge to firm the butter, about 20 minutes.
Place salmon in the broiler, and let cook, untouched for 6 minutes. Serve immediately.
