Skillet Spinach Artichoke Dip

2 T unsalted butter
3 garlic cloves, minced
1/2 onion, chopped
3 C fresh spinach
1 can artichoke bottoms, chopped
3 T cream cheese, cubed
2 C shredded Italian cheese (mozzarella, parmesan, etc.)
dash hot sauce (optional)

Melt butter in a skillet over medium high heat.  Add garlic and onion and saute until tender but not brown.  Add spinach and saute until soft, then add artichokes.  Saute for an additional minute, constantly moving mixture to ensure it doesn’t burn.  Reduce heat to low, add sour cream and mix it in as it melts.  Transfer mixture to a serving dish, gently fold in cheese (and hot sauce if using).  Cheese will melt from the heat of the dip.
