Spinach Artichoke Dip

1 can artichoke hearts
1/2 C mayonnaise
1/2 C sour cream
1/2 C grated parmesan/romano cheese
10 oz. frozen spinach
panko bread crumbs
salt and pepper to taste

Preheat oven to 350° F. Defrost and drain spinach, squeezing out any excess water. Mix all ingredients in a medium-sized bowl. Season with salt and pepper. Transfer mixture to a casserole dish and top with panko bread crumbs. Bake until heated through, about 30 minutes.

Makes 2 cups.
