Ma Po Tofu

1 package soft tofu
2 oz ground pork
1 clove garlic, chopped
1 green onion, chopped
1 t ginger, chopped
1 T rice wine
1 C + 1 T water
1/2 t salt
3 T oil
1/2 T soy sauce
1 T hot bean paste
1 1/2 t corn starch

Cut tofu into 1/2″ cubes. Soak in hot water to soften. Heat frying pan with 3 T oil, add garlic, onion, ginger and ground pork. When 80% cooked, add rice wine, 1 cup water, salt, soy sauce and bean paste. Add tofu and stir until boiling.

In a separate bowl, mix corn starch and 1 tablespoon of water. Add to pan and reduce. Tofu should be somewhat broken down and dish will have thickened.
