Quinoa with Red Pepper and Parmesan

2 C chicken broth
1 C quinoa
1 red pepper, diced
1/2 vidalia onion, diced
1/4 C fresh basil, chiffonade
4 garlic cloves, crushed
1/8 C parmesan
salt and pepper

Put first six ingredients (broth through garlic) in a large pot and bring mixture to a boil. Then reduce heat and let simmer for 15-20 minutes, or until quinoa has absorbed all the liquid. Remove quinoa off the heat and fluff with a fork. When done, the quinoa will have a spiral ring around each grain that is a result of the germ separating from the kernel. Mix in parmesan, salt and pepper to taste.
