Cajun Salmon Cakes with Lemon Garlic Aioli
ingredients
2 T + 1/4 C mayonnaise
2 t fresh lemon juice
2 cloves garlic, minced
18 oz. canned pink salmon
1/4 cup green onions, chopped
2 T panko bread crumbs
1 t cajun seasoning
1 T canola oil
directions
To make aioli, combine 2 tablespoons of mayonnaise, lemon juice and minced garlic. Combine salmon, green onions, 1/4 cup mayonnaise, panko bread crumbs and cajun seasoning. Form mixture into palm sized pattys and saute in canola oil.

Salmon mixture can also be served alone, topped with cucumber slices.
