Parmesan and Cheddar Cauliflower Mash
ingredients
3 C cauliflower florets
1 C chicken broth
1 T yellow mustard
1/2 mayonnaise
3 T butter
1 t onion powder
1 C sharp cheddar cheese, shredded
1/4 C parmesan cheese, grated
salt and pepper to taste
directions
Steam cauliflower in broth for about 10 minutes, or until cauliflower is soft and easily pierced with a fork. Add remaining ingredients to cauliflower and broth. Mash until all ingredients have been incorporated.
