2 1/4 C flour
2 sticks of unsalted butter, softened
8 oz. neufchatel or cream cheese 
2 eggs, beaten
1 can fruit pie filling

Preheat oven to 375° F and grease two cookie sheets. Combine all ingredients except for filling in a large bowl. Use a pastry cutter to cut the butter into the dry ingredients, then knead with hands to form the dough into a ball. Wrap dough in plastic wrap and chill for 40 minutes.

Roll dough out to about 1/8″ thick. Cut into squares. Spoon filling diagonally, going from one corner to the next. Fold the other corners into the middle. Bake about 15 minutes, or until lightly brown. Let cool, then sprinkle with powdered sugar.
