Falafel Sauce

8 garlic cloves, minced
1 t olive oil
1¼ C water, separated (½ C and ¾ C)
1 C tahini
juice of one lemon

In small pot, simmer garlic, olive oil, ½ cup of water and a pinch of salt for 10 minutes with the lid on. Remove from heat and let cool. In a blender, combine tahini, juice of one lemon, ¾ cup of water and about a teaspoon of salt to taste. When garlic mixture has cooled, add to blender and combine with tahini.
