Zucchini Gratin

4 T unsalted butter
3 zucchini or yellow squash, sliced 1/14″ thick
2 T flour
1/4 t ground nutmeg
salt and pepper
1 C hot milk
3/4 C bread crumbs
1 C grated Gruyere

Preheat oven to 400° F.  Grease a 9″ square casserole dish.  Melt butter in pan and cook the zucchini, covered, for 10 minutes or until tender.  Add salt, pepper and nutmeg and cook uncovered for 5 more minutes. Stir in the flour, then add the hot milk (I just nuke it for a minute) and cook over low heat for a few minutes, until it thickens.  Pour mixture into prepared casserole.

Top with Gruyere and bread crumbs, and bake for 20 minutes, until brown and bubbly.
