Creamed Spinach

1 stick butter
3 T flour
1 C half and half or milk
1 onion, minced
3 cloves garlic, minced
1/4 t nutmeg
6 C fresh spinach leaves
2 T olive oil
salt and pepper to taste

Melt butter in a saucepan over medium-low heat. Stir in flour, salt and pepper to make a roux. Add onion and garlic.  Continue cooking until onion is soft.  Add half and half and continually whisk until mixture is thick and coats the back of a spoon. Remove from heat and set aside.

Heat olive oil in a separate pan over medium-high heat.  Add spinach and saute until wilted.  Drain spinach if needed.  Add cream mixture to spinach and blend.
