Sheet-Pan Shrimp Scampi

1 lemon, sliced into 1/4″ rounds
extra-virgin olive oil
1 C dry white wine
3 T unsalted butter
1 lb peeled large or extra-large shrimp
2 to 3 garlic cloves, diced
1/8 t red pepper flakes
salt and pepper to taste

Heat oven to 450° F.   Arrange lemon slices in a single layer on a rimmed baking sheet. Brush lemon slices with oil and sprinkle with salt. Carefully pour wine onto baking sheet, around lemon slices. Try not to pour directly on top of lemon slices.

Transfer pan to oven, and bake 6-12 minutes, or until lemons are caramelized and charred in spots, and the wine has reduced by about half.

Meanwhile, in a medium pot over medium heat, melt the butter. Remove from heat and add shrimp, garlic, red pepper flakes, salt and pepper. Toss well.

Transfer shrimp to baking sheet, and spread in an even layer on top of the lemon slices. Return sheet to oven to cook the shrimp through, which should take about 3-5 minutes.

Toss everything well and serve immediately.
