Orzo with Asparagus and Cheddar
2 C chicken broth
2 C uncooked orzo
1 onion, chopped
1 can of asparagus spears or 1/2 bunch of asparagus chopped
2 C shredded cheddar
salt and pepper
In a saute pan, sweat the onions in olive oil and a bit of salt. When onions are transluscent, pour in chicken broth and bring mixture to a boil. Reduce heat, add orzo and let simmer gently until orzo absorbs almost all of the liquid, about 12 minutes. Add asparagus and freshly ground pepper and cook an additional 5 minutes. Remove from heat and stir in the shredded cheddar.
