Macaronia me Kima

1 lb ground beef
2 medium white onions, chopped
3/4 C plum tomatoes, chopped
1 garlic clove, minced
2 bay leaves
1 cinnamon stick
1/2 t sugar
6 whole cloves
1 t nutmeg
10-20 crushed peppercorn
olive oil
3/4 C red wine
salt and pepper
grated kefalotyri

Saute onions and garlic in olive oil until transluscent. Add meat and saute until brown. Add tomatoes, cinnamon, bay leaves, cloves, peppercorn and nutmeg. Lower heat and simmer 5-7 minutes. Add wine and simmer until liquid is absorbed, about 35-40 minutes. While meat mixture is simmering, cook spaghetti according to package directions. Season meat with salt and pepper, and serve over spaghetti with kefalotyri.

If you can’t find kefalotyri, you can substitute pecorino. Add a dash of Tabasco for extra kick.
