1 lb ground chuck
1/2 white onion, chopped
2 t cumin
1 t chipotle chile powder
1 (15.5-oz) can pinto beans with jalepenos, drained
1 (15.5-oz) can black beans, drained
1 (16-oz) bag tortilla chips
1 (8-oz) package shredded monterrey jack cheese
1 (8-oz) package shredded sharp cheddar
to top: green onions, jalapenos, tomatoes, avocados, sour cream

Preheat over to 400° F. In a large skillet, brown ground chuck and onion over medium heat, until meat crumbles apart. Add in cumin and chile powder. Remove meat mixture from pan and set aside.

Add beans to the same skillet and cook 6-8 minutes, stirring and mashing.

Put tortilla chips in a large casserole dish. Top with meat, beans and cheese. Bake 10-15 minutes. Top with toppings and serve.

If omitting meat, reduce cumin to 1 teaspoon.
