Guacamole

ingredients
3 avocados
1/4 white onion, diced fine
1 jalapeno pepper, diced fine
fresh cilantro
1/2 tomato, diced
1 t salt

directions
In a large bowl, use a fork to mash jalapeno, cilantro, half the onion and salt till it forms a paste. Cut the three avocados in half, remove the pit, and scrape flesh into the bowl along with the paste. Mash the avocado into the paste, leaving some chunks. Add tomato, remaining onion, cilantro and salt to taste.

Guacamole is traditionally made in a molcajete, a mortar fashioned from volcanic rock. The rough texture of the rock perfectly melds all flavors together.
